Happy Spring to one and all! Now's the time to break out the running shorts, T-shirts, and the packaging codes on The Laughing Cow® cheese wedges and Mini Babybel® cheeses! We know you all believe in a healthy lifestyle, and so do we! So, we're thrilled to introduce you to the Life Well Laughed Project!

Who Wants to Snack for a Good Cause?

We officially kicked off our Life Well Laughed Project on April 1, making it easy for you and cheese lovers across the country to "wedge" a good deed into your day! Through July 15, visit LifeWellLaughed.com and enter the UPC code found on the outside of the packaging of The Laughing Cow® cheese wedges or Mini Babybel® cheeses. The Laughing Cow® will donate $1 to support local health and wellness initiatives for every UPC code entered online. We have committed a minimum donation of $250,000, but with your support and participation, we hope to realize a maximum donation of $500,000. So, the more codes you enter from now until July 15, the more we'll give!

This year, Robin's goals are to both lose a little weight herself and inspire her daughter to reach her own goal of playing softball in college. Hungry Girl Gives Us a Little TLC

Hungry Girl 300 Under 300: 300 Breakfast, Lunch and Dinner Dishes Under 300 CaloriesJust last month, Lisa Lillien, who you all know as Hungry Girl, launched her newest book, Hungry Girl 300 Under 300: 300 Breakfast, Lunch & Dinner Dishes Under 300 Calories , which features (you guessed it!) 300 recipes containing less than 300 calories each. Around 50 of those recipes include either The Laughing Cow® Light cheese wedges or Mini Babybel® Light cheese!

In case you missed it, Lisa stopped by Rachael Ray in April to share a few recipes from the new book, including this great sandwich! Give it a try for a deliciously cheesy lunch or dinner today!

Hungry Girl's Grilled Fuji-n-Chick 'Wich

Ingredients (makes one serving):
1 (4-ounce) raw boneless skinless lean chicken breast cutlet
dash each salt and black pepper
1/2 cup peeled and thinly sliced Fuji apple
1/4 cup thinly sliced onion
2 dashes ground sage
2 dashes garlic powder
2 slices light bread
1 wedge of The Laughing Cow® Light Creamy Swiss cheese, room temperature
1 teaspoon light whipped butter or light buttery spread, room temperature, divided

Directions:
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add chicken, season with salt and pepper, and cook for 4 minutes on one side.

Flip chicken in the skillet. Add apple and onion, and sprinkle with sage and garlic powder. Cook until apple and onion have softened and chicken is cooked through, about 4 minutes. Remove from heat.

Once chicken is cool enough to handle, thinly slice and set aside with the apple-onion mixture. Lay bread slices flat and evenly spread the upward-facing sides with The Laughing Cow® Light Creamy Swiss cheese. Evenly top one slice with chicken and apple-onion mixture. Place the other bread slice on top with cheese-covered side down. Press gently to seal.

Spread 1/2 teaspoon butter on the upward-facing bread slice. Set aside. Remove skillet from heat, re-spray, and place back on the stove. Place sandwich in the skillet with the buttered side down. Spread remaining 1/2 teaspoon butter on the upward-facing bread slice.

Bring skillet to medium heat. Cook sandwich until hot and toasty, 1 to 2 minutes per side, flipping it gently.

Allow to cool slightly. Then cut it in half, if you like, or just bite right in! Yummm . . .

PER SERVING (entire recipe): 298 calories, 5.5g fat, 659mg sodium, 30g carbs, 6g fiber, 10g sugar, 33g protein
