If sandwiches are not on your personal lunch menu, try this creamy, smooth soup that was submitted to TheLaughingCow.com by "rubyduby." It's a nice and light option to reintroduce soup into your list of lunch and dinner options. Plus, it's your last chance to enjoy zucchini before it's out of season at the end of the summer.

Zucchini Soup
Zucchini Soup

Ingredients (makes four servings):

4 cups low sodium chicken broth
4 whole zucchinis
2 whole wedges of The Laughing Cow® Light Creamy Swiss

Directions:
Chop zucchini coarsely and add to pot with chicken broth.

Bring to a boil and simmer for 20 minutes or until zucchini is tender.

Puree soup with immersion blender.

Add 2 wedges of The Laughing Cow® Light Creamy Swiss and whisk until cheese is melted.

Variations: use three wedges of The Laughing Cow® and experiment with any flavor.

PER SERVING: 90 calories, 1g fat, 211 mg sodium, 16 carbohydrates, 5 g fiber, 7g sugar, 6g protein.
