Trimmed Down Trigger Foods

Spring is right around the corner and staying on track can always be tricky. As the weather starts to change and daily routines become busy, The Laughing Cow® is here to slim down those usually greasy go-tos! Instead of a slice from the corner pizza place, try the Sweet Onion & Roasted Broccoli Pita Pizza for a meal loaded with vegetables instead of calories! Or, perhaps Mexican food is more your style? Eat-O This Burrito is muy bueno and still packed with protein for a great go-to meal.

Sweet Onion & Roasted Broccoli Pita Pizza

Ingredients (makes two servings):

2 cups chopped broccoli
1 tablespoon light butter
1/2 vidalia onion, sliced thinly
2 whole wheat pita pockets
1 recipe cheese sauce* (see recipe below)

Directions:
Preheat oven to 425 degrees F. Spray a cookie sheet with cooking spray and place 2 cups of chopped broccoli on the sheet. Roast in oven for 10-12 minutes. Add salt and pepper to taste.

Melt butter in a skillet. Once melted, add thinly sliced onions, salt and pepper to taste. Turn skillet to medium heat and allow to cook, stirring only occasionally for 10-15 minutes until soft and golden brown.

Once the broccoli is roasted, reduce oven heat to 400 degrees. Lightly toast pitas in oven until just beginning to crisp.

Remove pitas from the oven and top each pita with half of cheese sauce* (see recipe below), half of the onions and half of the broccoli. Pop pitas back into oven for about 5-7 more minutes until pita is crunchy.

*Cheese Sauce
1 tablespoon light butter
1 tablespoon parmesan cheese
1 wedge of The Laughing Cow® Light Creamy Swiss
2 tablespoons skim milk
1/4 teaspoon each of salt, black pepper, crushed red pepper flakes and garlic powder (to taste more or less)

In a small sauce pan, melt butter and then add parmesan and The Laughing Cow® cheeses. Then add the milk and seasoning. Stir until mixture melts completely.

Eat-O This Burrito

Ingredients (makes one serving):

1/4 cup cooked brown rice (or any whole grain starch)
2 tablespoons black beans
1 tablespoon sliced scallion
2 tablespoons of your favorite salsa
2 wedges of The Laughing Cow® Light Creamy Swiss
1/8 teaspoon Kosher salt & black pepper
1 whole 10-inch flavored tortilla
1/4 cup cooked, diced chicken
2 tablespoons seeded and diced tomato
1 tablespoon cilantro leaves
salsa, cilantro and tomato (for garnish)

Directions:
Combine the brown rice, black beans, scallion, salsa & one wedge of The Laughing Cow® cheese in a microwave-safe container. Microwave for 45 seconds.

Remove and season with salt and pepper; stir to combine and reserve warm.

Spoon warm black bean-brown rice mixture in the center of the tortilla, one-third from the bottom edge, closest to you.

Top with remaining cheese wedge on the mixture and warm diced chicken, diced tomato and cilantro.

To wrap, fold the left and right sides of the tortilla toward the center, atop the filling. From there, fold the tortilla bottom up and over the filling, rolling somewhat tightly to secure the ingredients inside.

Cut in half and serve warm. Garnish with additional salsa, cilantro or tomato, if desired.
